I brewed a saison with 3711, and it went from 1.056 to 1.002. That gives it an apparent attenuation of 96,2% and a real attenuation of 78,8%.
Wyeast writes that 3711 have an attenuation between 77-83%.
Does Wyeast state real or apparent attenuation? Looking at the number I guess it's the real attenuation they're listing.
I have brewed this beer before, and that time it had an FG of 1.004-1.005. That was a really good beer, I hope this one doesn't turn out to dry.
