I brewed a saison with 3711, and it went from 1.056 to 1.002. That gives it an apparent attenuation of 96,2% and a real attenuation of 78,8%.

Wyeast writes that 3711 have an attenuation between 77-83%.

Does Wyeast state real or apparent attenuation? Looking at the number I guess it's the real attenuation they're listing.

I have brewed this beer before, and that time it had an FG of 1.004-1.005. That was a really good beer, I hope this one doesn't turn out to dry.

Saisons are dry by numbers, but they never feel dry...

I recently brewed a Saison using Wyeast 3726 and got 88% AA. Finished at 1.007... And this yeast does not have the same attenuation as 3711, which is a beast. I however like the profile of 3726.

This is very common attenuation from 3711. I've even had it ferment to 1.002 with some crystal malt and a mash temp of 154. I wouldn't worry about it being too dry. 3711 is a high glycerol producer which will increase the mouthfeel.
