I have found a great deal on a 7 gallon bucket + 6 gallon carboy that somebody was using to make wine. I don't really plan on making batches larger than 5 gallons, so I'm worried about the extra headspace that both these will create with their size. Thoughts?

If you don't rack to a secondary your fine. Its if you rack to a secondary vessel that you need to worry about.

I use an 8 gal bucket for primary for almost every batch I do. The extra space is no big deal during primary. For secondary, extra space can be a good way to get an infection if the air is not displaced.

If you just step up to a 6.5 gallon batch, when you transfer to the 6 gallon carboy you will have enough to fill the headspace. You'll appreciate the extra gallon when you are done. ;)

It was a Craigslist ad, and the seller was wrong - it ended up being a 6 gal bucket and 5 gal carboy. Score!
