5 Million Mad Dog Wine

Well, I started another "experiment" today. I pitched some Red Star Premier Cuvée Active Dry Wine Yeast approx an hour ago to start my Jalapeño Wine. I'm kind of expecting a vigorous fermentation, so I decided to use a blow-off tube until everything peaks and settles down. The tube started to bubble after 25 min.

In regard to hot wines, I didn't use it, but for future reference does anyone know how 1-3 drops per gallons of Mad Dog 357 Pepper Extract might affect the yeast? Keep in mind the extract is rated at 5 million Scoville Heat Units! I have even hotter extracts like Mad Dog Plutonium but it does not mix as well. I plan on going "nuclear" with some wine soon!! :rockin:

It kinda beats me why people make wine of stuff that has no sugar in it. All the alcohol is derived out of the sugar added, so one might as well simply make sugar wine and add a few drops of Tabasco to the glass. Sorry, not criticizing, just curious!
 
I meant Jalapenos do not have sugar. All sugars have been added to produce alcohol...
 
Plus, there are other compounds which effect the flavor. Wine is NOT just water and alcohol. Come on guy.
 
It'll be interesting to see how the yeast reacts, please keep us updated, I cook a lot, in my early years I was a culinary grad, so being able to have a jalapeno wine on hand is very appealing, even if it turns into vinegar, it's a win win situation!
I'd be interested in swapping a bottle of wine with you for a bottle of your mad dog experiment if it comes out as well as you hope!

I ferment peppers all the time...Lacto fermentation. Makes a mighty fine hot sauce:D
