Well, I started another "experiment" today. I pitched some Red Star Premier Cuvée Active Dry Wine Yeast approx an hour ago to start my Jalapeño Wine. I'm kind of expecting a vigorous fermentation, so I decided to use a blow-off tube until everything peaks and settles down. The tube started to bubble after 25 min.
In regard to hot wines, I didn't use it, but for future reference does anyone know how 1-3 drops per gallons of Mad Dog 357 Pepper Extract might affect the yeast? Keep in mind the extract is rated at 5 million Scoville Heat Units! I have even hotter extracts like Mad Dog Plutonium but it does not mix as well. I plan on going "nuclear" with some wine soon!! :rockin:
