Hello,

This was my first BIAB recipe which I did not get in a kit of any sort, and entirely collected the ingredients on my own.

Grain:
3lbs Weyermann Pale Wheat
2lbs Weyermann Bohemian Pilsner
1lb Flaked Oats

Hops:
US Saaz Hop Pellets - 1 oz

Extras:
.5oz Crushed Coriander Seed
.5oz Dried Bitter Orange PEel
1 Sachet of Trader Joe's Chamomile Tea

Yeast:
Safbrew T-58 Ale Dry Yeast

----
Pre boil volume: 5.25 Gallons
Post boil volume: 3.75 Gallons
Into the fermenter: 3 Gallons

The Biab Mash:
20 Min @ 122F
60 Min @ 152F
10 Min @ 170F

The Boil:
1 oz Saaz @ 60 Min
.5 oz Coriander @ 10 Min
.5 oz Bitter Orange Peel @ 1 Min
1 Chamomile Sachet @ 1 Min

-----------------------------
Will bottle in about 2 weeks. But so far it is fermenting away in the basement!

According to brewers friend I should end up around:
FG: 1.013
ABV: 5.17%
IBU: 26.57
SRM: 3.38

Something in your numbers doesn't look right. With only seven pounds of grain 5.25 pre boil is probably more water than you need, use the priceless calculator. I don't see how you will have .75G of trub and shrinkage from post boil to fermenter - that's a ton. Also don't really see a need to do a step mash..

Brew day today with 3.25G into FV and 8lbs of grain I used 5.14G for mash, with 2.2 oz of hops.

hmm maybe brewer's friend's calc is not good?

i went based on that
i probably could have went with 4.75G

So, I'm curious. How did this beer turn out? I'm using your recipe tomorrow in my first BIAB. Would you make any changes? Many thanks!

OP hasnt been on since 2018 so you may not get word back. Are you also going to be doing a 3 gal batch? I like what white tea can bring to wit beer and would usually go w/ more than the OP. Close to 1 oz of loose leaf for 5 gal batch

Yes, 3 gallons. I'm going to try the chamomile tea and see what happens. White tea sounds interesting too.

I'd love to get a good 3-gallon recipe for a cream ale for my next brew if you'd care to share one. Thanks.

I like the chamomile too, I can't remember how much Ive used of that, but Id guess close to 1oz, so you could keep with just the one sachet of tea, or bump that up a little.

My cream ale I've been working with (and will be brewing again soon) is a 6 gallon (into fermenter) batch
Your choice base malt 7.75# ( I split w/ a pilsner and pale ale about 70/30%, I may try pearl as base pale ale for my next batch)
Flaked corn 1.75#
Flaked barley 0.5#
Crystal 20 0.5#
Light Munich 0.5#
Flaked rice 0.25#

Hops on hand to get 10-15 IBU, usually will get a 30 min addition of saaz

Ferment w/ Dieter in low 60s (60-62). If you dont have a temp control set up, then shoot for ambient temps in upper 50s if you can for the start of ferment

I like that cream ale recipe. May have to try it soon.

The witbier should be ready in about two weeks. Will report back then....
