Hello All! So I recently got my hands on a bottle of 3 Fonteinen and wanted to pitch the dregs into a cider. I was planning on doing it in primary but I have no idea if the dregs alone will be sufficient. Should I co-pitch with a french saison yeast? Should I primarily pitch the saison and pitch the dregs in secondary? Any assistance would be great! Happy Easter/Passover!

Any time is fine to add the dregs.
Is the juice pasteurized? If it is, you'll definitely want to pitch fresh Saccharomyces.

FWIW, I never pitch dregs straight. I always make a starter and then use a few drops of the slurry.

@RPh_Guy I can always count on you to save the day! :D Hopefully you and your loved ones are staying safe and healthy!

My local grocery store has a boatload of Golden Delicious and Empire Apples for 70 cents a pound so I'm just going to press it fresh!
