1. one of my last batches turn out sour and without gas what could be the reason?

2. how much vanilla (extract or seed podds) should i add to 20 liter (about 5 gallons)
 
1. Contamination. You need to clean and sanitize everything. Without gas? You mean you didn't get carbonation? What is your bottling procedure?

2. If it were me I wouldn't add any vanilla to any beer. What kind of beer?
 
We need more information to answer your questions. What was the style/recipe of the beer that was sour? What yeast did you use? What was your brew day procedure? What was your bottling technique? How did you add the priming sugar? What kind of beer are you adding vanilla to? What is the recipe/style?
