Have a few non kit brews under my belt and my next brew will be a stout I picked up in the recipe section of this site called "boondock Irish Stout" That seemed to really be a hit.

Ill will be trying to follow the recipe as close as I can but some things are not available here. This is the original recipe.

Batch Size (Gallons): 5
Grains:
0.5 lbs. Caramel/Crystal Malt 80L
2.0 lbs. (Black) Roasted Barley 300 SRM
0.33 lbs. Flaked Barley 1.7 SRM

Extract:
4 lbs. Pale (Medium) Liquid Extract
1.75 lbs. Light DRY Extract

Hops:
1 oz. Target (Beginning)
1 oz. East Kent Goldings (Finishing)

Yeast:
Munton's Gold (ill use whitelabs Liquid Irish ale)

Now here is the problem, I dont have Caramel/Crystal Malt 80L available. I have the 20 60 and 120 but not the 80. And from what I read the other ones impart a Red color? What else could I use?

Also can i use DME Light, instead of Amber or dark?

Feel free to throw in some input.
 
+1 to 2 lbs of roasted barley being too much

As for the crystal malt, the 60L will be pretty close to 80L in flavor. The 120L will give you a raisin/currant flavor along with toffee.
 
In the recipe thread lots of people questions that amount but then tried it and said it was great. It got good reviews on this site, recipe - Stout Boondock Irish ale. Maybe ill use 1#
