I brewed an Irish red ale a few years ago with WLP004. Even after weeks and months in the bottle in the fridge, it would still readily dump yeast chunks into the glass when poured. Tasty though.
Just did a starter for WLP300 recently, then put in the fridge (since I wasn't using right away and now delayed for another week). It took over a week for the beer liquid on top to completely become crystal clear. For several days, you could easily see yeast settled at the bottom, but the liquid on top was still opaque. Just almost after a week until it was very clear. Not sure how similar the flocc characteristics are for WLP004 and WLP300 are (I'm too lazy to look at the specs online at the moment), but it may take a little longer than expected to flocc out. I love WLP007 (especially since I bottle) for this reason. A day or two in the fridge, and the stuff is like concrete at the bottom.
