Belgian abbey II in an imperial stout?

So I pitched some Belgian Abby II in my Imperial Stout. It's basically a 1050 clone with ingredients covering the entire globe. We call it "sloppy stout". However, I just took a gravity measurement and a tasting...the Belgian yeast have definitely over taken the brew. Lots of fruit in the smell...

    Massachusetts Done brewing... cleaning house

UPDATED THREAD!!! Pictures added (and parted out prices), because so many people wanted photos. I should have just put them out to begin with. There are more photos, but this should get things started. IM's are too difficult to deal with right now--Please just email me at [email protected]...

Is it possible to Over SANITIZE

Stalled fermentation into secondary on an American Ipa. I soaked my hop mesh bag in Sanitizer, but didn't wring it out the best I could, although I thought I got most water/Sanitizer out of it. Would that kill ALL viable yeast, or just slow down secondary fermentation? I've only moved from...

    Searched but couldnt find...

A good thread that compared the pros and cons of biab vs. Traditional all grain brewing. I am having trouble seeing the benefit of a traditional all grain setup...over a biab setup w/ a very nice blichmann kettle or a keggle?

Why is my ABV so high?

So I'm sipping on my Belgian honey (8%)... and I can't help but question how one smack pack with no starter got my "honey" induced ale to ferment so fervently? In fact, all my ales seem to finish higher in ABV than what the recipes call for. My only thought is the amount of yeast nutrients I...

this shipping cost is pissing me off

I am military stationed in italy and I cant have anything shipped here unless it comes for midwest brewing. Austin homebrew use to ship to apo's but they no longer do it... Where is a vendor that I can trust not to rip me off with shipping prices?

Getting the smell out of my primary...

I recently left a.Belgian in my primary for 4 weeks. After bottling and cleaning with oxyclean I have a very strong beer aroma. I don't want it to affect future beer... How do I clean it and remove the smell so I don't get a tainted beer?

My take on the Midwest Belgian Honey

Ladies/Gents, It's been a full 6 weeks since I brewed my Belgian Honey. I followed the recipe to a T, and it has finally matured to a drinkable level... It finished at 8% ABV, a little high--but the alchohol doesn't come through AT ALL... It has a TON of candi sugar nose... and when it...

Need good info on biab types/sizes

Fellow Brewers I've decided to go BIAB for my next beer. I like the concept and want to see how different the beer tastes before I go full out all grain. Thus, I have exhausted my search capabilities and have yet to find a good resource on where/ what size of nylon or muslin bags to buy. Need...

Reading Brewing up a business... lovin' it

Just opening up the floor to any businessmen/woman that have read the book, wanted to... or just to chat about better business practices. I'm currently preparing to launch my second business and Sam's perspective and story telling is very enjoyable PLUS intelligent. I highly recommend it. I...

    The SCIENCE of off-flavors...

SUBJECT: Extract TWANG SCIENCE MISSION: Provide some science to back up the extract "twang" theories...which typically appear more opinion than fact. 1. Why would old (past it's shelf life) DME/LME lead to the "twang"? 2. What by-product would yeast produce, that could lead to that...

    Interesting FG reading... need interpretation

Ok, I've been fermenting my double hop head IPA with 20g of S-05 at a 64F from my 1.068-70 OG ( hydrometer is kind of cheap--refractometer is on the way). Mr. Malty recommended 16g, but a few yeast studies I've read recommend 4-6g/l at my Plato levels. As such-- I figure I may have...

    Question: Extract brew challenge prize?

So, JOnheck and I cannot agree on the current brew challenge prize. What do each of you consider the best buy for guys that are planning on going full-grain? NOTE: Our current debate is between conical.fermentor or blichman 15 gallon brew kettle w/ false bottom... Thanks ahead of time... J

Cracked open my first bottle of homebrew...

Well, It's thanksgiving--and I just couldn't wait any longer, LMAO! I made the midwest milk stout extract kit... looking for a flavorful dessert beer. I just opened a PERFECTLY CARBONATED Bottle... to find a very bitter beer. It is pretty clear for a stout, and starts off w/ a dairy-like...

So, I came home and my fridge was at 40F... damn temp controller!!! Fermintation has slowed to a crawl! I've got it back up to 65... but don't want to stress the yeast too much. Any recommendations?

My lesson on chilling your wort...using a starter

Well, after brewing my second batch and having to re-pitch (AGAIN!) I started evaluating my process. I soon realized the importance of rapidly chilling your wort... After brewing my third batch and rapidly cooling my wort (under 20 min.--compared to over an 2 hours previously)--I saw much...

    Midwest Belgian Honey Kit... FUN!!!

Guys, Just wanted to share my enjoyment of the midwest belgian honey extract kit! :rockin: I truly enjoyed all the additions... Each one gave a diffrent smell profile, color profile, and etc. One thing I learned too was that 6lbs of DME takes a ton of time to HOT BREAK... which gave me...

Excited... bottled first brew... brewed 3rd on same day

Just bottled my cream stout... thought I would share. OG 10625 FG. 10200 FLAVOR: Comes on sweet, finishes clean and highly hoppy... malty tones linger on the pallet. Hops need some bottle conditioning... to smooth/equalize with the sugars. I bottled after 2 weeks. Plan to condition for 14-21...
