Spontaneous fermentation after 18 days in secondary

I'm brewing a batch using Nottingham, was getting ready to bottle because it had been in the secondary for 2.5 weeks. I wake up this morning and see that the carboy is full of krausen and that the beer is in a vigorous ferment. The beer had a vigorous fermentation in the primary 3.5 weeks ago...

    Consistency in Taste

I've finally become addicted to the hobby long enough to have developed a decent stockpile of various homebrew (oldest being 6 months, youngest in bottle about 6 weeks). I've recently finished off the first case of a Wheat Beer that I consider my first "real beer" (the first one made once I...

    Expect a Bottle Bomb?

As a follow up, the bottles were just fine. In fact, the beer matured very nicely!

    Expect a Bottle Bomb?

They were bottled for about 4 weeks before I left. I think they should be fine. I just wanted a second opinion (or 5) before I popped a top and got a surprised.

    Expect a Bottle Bomb?

So, without thinking about my beer, I left my apartment for two weeks and the air on around 87. I have my bottles in cases in dark closets... still the temperature will be near the AC temp (it is Texas after all). Of course all of my gravity readings were stable before I bottle and I am certain...

WLP320 more banana esters than anticipated

Give it a bit longer and it will mellow some. I used the 320 recently for a Watermelon Ale. After about 2-3 weeks in the bottle, I opened it up and it tasted like an amazing banana beer...but not watermelon. I did ferment warm 76-77. Around week 4.5-5.5 in the bottle, the banana had mellowed...

    Fermentation Chamber

I live in a small apartment and do not have room for an extra refrigerator and really get tired of the big tub of water method. My pantry, below the bottom shelf, is big enough for three 5 gallon carboys. Do you think if I got foam insulation to create a "ceiling" that the sheet rock walls...

What to do with fermentation when on vacation

Sadly, I have yet to reach the point to where I plan my vacation around my brew schedule. I'm going to put a batch in the secondary right before I head off for two weeks. Seeing as I live in TX, I don't want to leave my AC running too low so I can save on power. What would you do to...

    Apfelwein Yeast Question

So I added yeast nutrient and krausen went everywhere before I could get the airlock back on. This was only 1 tsp (out of 2.5-5 recommended). Hopefully the air didn't do anything negative to the apfelwein. I guess I'll see about bottle conditioning.

    Apfelwein Yeast Question

So I made a batch of Ed Wort's with Cotes Des Blancs because I'm impatient and the HBS was out of Montrachet. (1) Should I add a yeast nutrient? I am on day 7 and it is still bubbling away. (2) Does this bottle condition well? Will it carb okay with 3/4 cup dextrose? I know there...

I've got apfelwein in my airlock

Just made this same thing with Cotes de Blancs... it's fermenting like crazy, but no krausen. It's been so much fun to watch. The only problem is that my apartment now smells like butt... this has been the worst smelling stuff I have made.

How to Make Wheat Ale a tad bit sweet?

Here is my recipe (built from others, of course) 5.50 lb Wheat LME Extract 0.50 lb Aromatic Malt , Belgium Grain 0.50 lb Cara-Pils/Dextrine Grain 1.00 lb Honey 0.50 oz Perle [6.6 %] (60 min) Hops 0.25 oz Perle [6.6 %] (15 min) Hops 0.25 oz Perle [6.6 %] ( 5 min) Hops 5 cups of...

How to Make Wheat Ale a tad bit sweet?

I just got through bottling a wheat ale with 5 cups of watermelon added to the secondary. Upon tasting when getting the FG, the beer was good but something was missing. After I added the dextrose for bottling, BINGO! The small spike of sweetness made the beer. I assume this will ferment out to...

    Bottling From The Keg

How well does this work? I wonder if this is a solution to bottling. I live in a small city apartment and cannot fit a kegerator anywhere, I could store a 5 gallon keg and CO2 container. Do you think I could jut fill a growler from the keg and then give it an ice bath when ready to drink?

    Fruit Beer Tune Up

Sorry to be slightly off topic. I just made a brew similar to yours today. How did it turn out? I used a different yeast and hops WLP320 and Perle. I was a bit concerned with the IBU I'm going to be right at 19-20, which is where you are. How is the bitterness of your beer? I've been slightly...

    Gravity, Fruit, and Alcohol content

Will adding about 4-5 cups of watermelon juice to my secondary secretly affect my alcohol content? I will be using an organic, fully ripened watermelon from a local farm. That means it have a higher sugar amount than most store bought melons. If you get the alcohol content from...

    Watermelon Ale: Input Needed

I'm brainstorming for a watermelon ale, but need some input: For the watermelon, would you: (1) Add the juice to the secondary or (2) Do a 2 or 3 Gallon brew of wort and then add 3/2 gallons of watermelon juice during the primary? Why?

    Sweetwater Blue

I recently moved out to Texas and can't get a hold of Sweetwater anymore! Does anyone have a recipe that is pretty close to Sweetwater Blue? Any suggestions?
