    My starter looked exactly like that when I used 1968. Beer turned out great! Just be careful when you pitch it - it can come out a little clumpy. Get it as well suspended as possible first.

    Personally, I'd stick it in the fridge. That will allow the yeast slurry to settle out of suspension and also work on its energy stores. You can take it out of the fridge a few hours before pitching to let it get to room temp, and should be able to decant some of that clear, useless starter beer...

    Thank for the replies, amigos! I love Maris Otter, too, but the lighter profile of the GP seemed right to me. Maris Otter was my go-to for a recent ESB that I'm quite happy with. I'll follow-up with about the GP in the blonde if I go forward with it. :mug:
