First Lager Brett Brew - pitch rate?

Hey everyone. I'm going to brew 5.5 gallons of my German Pilsner but change the hops up from the usual Hallertauer to Manderina Bavaria. I plan on fermenting with lager yeast (WLP835). Usually final gravity for this beer is around 1.012. At that point I plan on racking, raising temp to 75...

Banana's Foster Mead - recipe suggestions

I've been brewing for 5+ years but have only done one mead - a raspberry/chipotle a couple years ago which was/is delicious. Splitting some honey with some folks in my brew club soon and we were kicking around flavor ideas and my wife really latched on to Banana's Foster after someone said...

    Ferment WLP833 as an ale

Want to brew my first Munich Helles and submit to competition. Read you can ferment 833 at 65 just like an ale to hurry the beer along with no negative effects. Have any of you tried this?

Aeration Stone For Carbing Nitro Beers

So I’m starting to receive my nitro equipment now. For those that don’t carb with CO2 and instead just use beer gas do you use an aeration stone and additional tubing to put it at the bottom of the keg instead of venting into the headspace? I’ve read that this extended beer contact will carb...

    Samischlaus BJCP

Thinking of brewing a Samischlaus type dopplebock but wondering where in the BJCP categories it would fit. Schloss Eggenberg calls it a dopplebock but at 14% abv it exceeds the dopplebock guideline which says up to 10%. Thinking it may be a little sweeter as well. Any judges out there with an...

    Zurich Lager Yeast WLP885

After some internet searches it appears this yeast is supposed to be available in September and October each year but I can't seem to find it. Has anyone seen it for sale?

    BYO 2 for 1 special

Isn't it about the right time of year for the 2 years for 1 or gift a subscription with the purchase of 1 for BYO? I've been waiting but haven't seen anything yet.

    How long to freeze Eisbock??

I put a 5 gallon keg of Eisbock in my keezer 5 hours ago and put the keezer on 0. I thought it would be frozen by now as the beer started out at about 40 degrees and the keezer temperature dropped like a rock but popping the lid there is still no ice/slush. How long will this take??

    Feeding yeast starter

I brewed a while back using Conan and overbuilt by 100B cells which has been in a smaller mason jar. It's been five months and I want to feed this yeast to keep it healthy. I don't really need to increase cells over 100B. How much starter wort do I need to feed it and do I do this just like...

    Cider from non-mill juice

We used to live about 30 minutes away from an apple mill where I was able to get fresh pressed cider for my previous ciders and they were delicious. Now we don't live any where near a mill so I'm going to be stuck using cider from Costco or the grocery store. Can that type of cider still turn...

    Kegging Belgian Tripels

I'm way overdue to brew a Belgian but have questions as I keg all my brews. I have a secondary regulator which it appears I'll need to keep at about 25 psi in a 38 degree keezer with a line length of around 21'. Does this sound right? When dispensing beers that are 3-4 volumes do you get...

Connecting flush mount breaker box to control panel

Ok I need some help. We've moved to the south where basements don't exist due to elevation (Charleston, SC is 12' above sea level) so I'm now forced to become a garage brewer. We have a 2 car garage that's finished - meaning it has walls and a ceiling and painted to look nice. The breaker panel...

    Summerville area brew shops?

Hey guys. Relocating from KS to Summerville after our house closes next month. Are there any brew shops in the area for a good selection of grain/yeast/etc.?

    Expiration date on pumpkin beer?

My son had a couple of his beer buddies come over last week to watch the KC Royals game and have a couple of beers. They had tasted an IPA (keg kicked) I submitted to my first competition a couple months ago so were excited to see what I had in the (8 tap) keezer. As our house is up for sale I...

Element for Brewer's Hardware element enclosure

For the last couple years I've been using the Brew Hardware element enclosures on my 20 gallon Stout kettles HLT and BK (1.5" TC) however they are flimsy and the tops don't stay screwed on resulting in us having to tighten them constantly. We have to remove the BK element for cleaning each time...

Backsweeten cider with honey - process?

I'm new to ciders (this is only my second batch) and have never used honey in any brewing capacity before. I have a 5 gallon keg of tart cherry cider in the keezer. I had high hopes for it but when racking to keg added 1 lb of warmed honey (microwave) and a quart of tart cherry juice then...

    Pit Barrel Cooker

I've never smoked any meat in my entire life but SWMBO and I enjoy pulled pork and ribs from a local gas station (Oklahoma Joe's BBQ) so thought of taking a shot at it. I started looking at cheap (,$400) offset cookers and started bookmarking sites with all the mods that I'd have to do. Seemed...

Hop Spider and late hop additions

I have a large hop spider in my BK that we've used for several batches without issue. I love not having to worry about hop debris in the filter/chiller now as our filter used to clog all the time before the hop spider. Having said that however, we brewed an IPA yesterday where we added 9 oz...

    Nasty smell off fermenting cider

Fermenting my first batch of cider so didn't really know what to expect. 5 gallons in a 6.5 carboy in fermentation fridge sitting next to a Pale Ale in a 6.5 at 65 degrees. The pale ale went into fridge last Sunday and the cider went in on Tuesday. The beer was smelling great but is now...

Brewing salts - EZ Water Spreadsheet

We haven't been happy with some of the flavors we're getting in our beers which I believe can be traced back to our water chemistry and am seeking help with understanding the correct usage of the EZ Water Calculator. We start with 100% RO water and build up profiles from scratch. What I do...
