    Maibock aging

The bottles are sitting at around 55 degrees...I believe since this is a bigger beer, I'm just jumping the gun. The kit specifically says this can be prepared as a lager or ale style. It is an ale yeast though (Notty). The beer is actually very good, but that first sip just surprises you...

    Maibock aging

Well, primary for 2 1/2 weeks before bottling, then waited 2 weeks and had my first taste. BOOM! Right up front it's either insane hop character (not likely), or the amount of alcohol (9.9lbs of fermentables in a 5 gallon batch) I've had experience with stouts, porters, sparkling ales, and...

    Basic Mead Recipe and Questions

Took a sample of this yesterday and it's going to be fine. Apparently chopping up the nutmeg into quarters and only leaving it in for the 30 minutes before straining into primary didn't cause nutmeggagedon. We're still fermenting along and the mead is clearing quickly. Wife has requested it...

    Basic Mead Recipe and Questions

Well, the nutmegs called to be "chopped" so I just took a hammer to them just enough to break them open into basically quarters. They were in the boil for 30 minutes then strained out. I don't know what to expect (yikes!) Dang recipe book! Hopefully it's not too god awful, but at least you...

    Basic Mead Recipe and Questions

I pulled a 1 gallon recipe that called for the following: 3 lbs honey 3 whole nutmegs crushed 1 Dejuiced lemon (use the meat) 1 tsp yeast nutrient 1 pack wine or champagne yeast Instructed to boil the water honey and nutmegs for 30 minutes, strain, then cool down to pitching...

    Possible Recipe-Wheat Beer #1

Definitely good advice about the extracts and finding a more economical way to go about it....Also, I think I will drop out the carafoam and do the half on the C10 as suggested. I would like a little caramel flavor to throw in a twist...Like I said, I'm a newb to brewing outside extract kits...

    Possible Recipe-Wheat Beer #1

Be gentle:ban:......I'm using Beersmith for the first time. Would this produce a decent wheat ale? I'm starting to think Spring!:mug: Recipe Specifications -------------------------- Batch Size: 5.00 gal Boil Size: 3.25 gal Estimated OG: 1.050 SG Estimated Color: 7.2 SRM Estimated...

    Extract Question

Ahhhh, the voice of reason to help the panic of a noob! I didn't think about just boiling the "tea water" and adding hops and such (whirfloc). After the 60 minute boil I will have the following options: 1) Have enough headspace to add all my LME/DME to my single 4 gallon pot, then cool in...

    Extract Question

I have a 4 gallon brewpot that I use for almost all of my brewing. Most of my extract kits have called for steeping grains in 1-2 gallons of water and then adding another 1-1.5 gallons of water to boil. This has always left me with .5-1 gallons of headspace to add the LME/DME. I recently...

    Spring Time Suggestions

Well, I have enough Stout and Porter to last me through the winter, but need a solid springtime beer. I've seen German/American etc wheat kits, but wheat beer has more of a summer feel to me. Is there a good in between beer for semi-warm weather? This is currently the front runner, but I...

    grape and granary ??

I started off with Coopers kits on a whim and found out I like this beer thing...Once I visited "the grape" I got hooked even more. I've purchased their robust porter and oatmeal stout extract kits. All have turned out well. They even have a Belgian Tripel with 11-12 lbs of fermentables...

Not able to bottle whole batch in same day

Not able to bottle whole batch in same day

:eek:I forgot to mention that I am bottling straight from my primary using carbonation drops. I have not mixed in any priming sugar, I was more concerned about any potential infection with the new oxygen sitting on top of the beer.

Not able to bottle whole batch in same day

Well, this blasted work:mad: thing got in the way midway through the bottling process! I had just finished up my 1st case of bottles and then had to leave the house and am still away! Do I have cause for concern if I only got to bottle one half of the 5 gallon batch? I'm worried about the...

Help me get more head (on my stout!)

I figured if I didn't clarify the title the advice would be 1) Fire/Divorce your wife 2) Meet single girls 3) Give them homebrew 4) ...... So, I've brewed the coopers stout kit to the T and I like the flavor, but still the beer is not as thick as I'd like and doesn't hold that thick...

    Newbie mistake-Beware of Instructions

Well, before I knew of this website, I thought I understood what "just before boil" means. I do my extract kits on a gas stove with a 2.5 gallon boil. I even had a thermometer, but once again I was going on the "just before boil" text right in front of me. I steeped my grains all the way...

    Bottle Conditioning Questions

Point taken and dead on...if it doesn't clear, oh well! Thank you for the dry yeast suggestion. I'll give it a try. I will update in a few weeks when I try this during the Steelers vs. Saints game on Halloween night. I might dress up as a drunk if it tastes like I think it will :tank:

    Bottle Conditioning Questions

Up until now, I've had relatively clear beer. I had been doing the Coopers no boil beer kits. I moved on to a beginner kit with steeping grains, hop pellets, and some spices (Xmas beer with cinammon, nutmeg, and cloves) I had this beer in the primary for 3 weeks and then bottled this past...

    Do you sniff your airlock?

Good, I'm not crazy! I also have the 3x a day routine, morning, evening, and then tuck it in for the night with a good SNIIIIIIIIIIIIIIIIIIIF. Sometimes it can go straight to your dome:drunk:
