    another Belgian Wit recipe

    Update : I may be biased, but this is the best Wit I've ever had. It's winter, yet it was 60 degrees out. I know this is a summer brew, but it was damn good while I was grilling steaks tonight!

    Quick Bottling question!

    29 days later, and I just cracked open a bottle. I marked the top with a "?" so I would know which one was the twist off. It poured a nice 1" head, nicely carbonated, and I swear is the best Belgian Wit I've ever consumed. I have no doubt in my mind that the rest of the batch will be the same...

    Quick Bottling question!

    Thanks for the responses, I only had 3 empty sanitized bottles left, but 4 capped twistoffs. I ended up pouring 3 of them of them in the clean bottles I had, and left the 4th in the twist off bottle. I just took a sharpie to the caps of the four in question. I'll probably taste test one of them...

    Bubbling around 12 hours

    Temp in the fermenting room is now 66, the bucket temp is 64-66. The air lock is not as aggressive as it was when it was 20 hrs in, but it is still releasing CO2

    I just noticed my airlock not active anymore (48 hrs in) yesterday it was popping every 3-4 seconds. My concern is the temp when I just looked at it. 62 degrees in my basement bathroom. I just turned the heat up in the house by a few degrees. I'm using a Safebrew s-33 for a Belgian Witbier.

    Sounds good! ginger, lime, and lemon is sounding like Starr Hills Lucy beer, which I like, and they no longer make. The reviews of that particular beer wasn't that great. But too each their own I guess, cheers!

    I pondered the thought of using a tsp of ground clove when popping my coriander seeds but thought I might regret it. I did however mash up two whole cloves. I don't think it will make any difference, but I can say I added a hint.
