A big thanks for all of you experienced brewers out there. I'm a relatively new empty nester who has picked up brewing ales a little over a year ago. Wife says, "it's about time you got a hobby, it's good for you." I have been using extracts... typical recipe.. 6 lbs alexander's munich malt, two lbs cyrstal malt grains, 1oz pearl hop at boil, 1 oz cascade for flavor, and 1 oz cascade at secondary. I would really love to try to do all grain, but really don't know how or the equipment needed. I'm also debating whether to do a guiness clone..I found this site a couple of days ago, and just keeping reading the articles... valuable stuff. Look forward to reading more....

I'm with you on the ales! Sounds like you're really working the extract angle. I haven't done an AG yet,either, but it sounds like you're about as close as you can get to it without actually being there. I just got a Bitter bottled. Tried an experiment where I ran one batch through primary and secondary ( 7 days each) and the other one stayed in primary the whole time. Bottled almost a week ago. Can't wait to try one against the other. I'm betting on the first one being better. My next project is going to be a coffee stout that I want to lay up until the Fall. We'll see how it goes.
You've come to a great place. There are many great brewers here. You can always find a second ( and third) opinion on any question you might have, but everybody is willing to share their experience. They're a good group.
