I was in San Marcos California eariler this year and had lunch at the San Marcos Brewery & Grill. I sampled their Hefe and really enjoyed it. Now i must say that as a soldier stationed in Germany for 27 months, their Hefe was in no way close to a true Hefe... The one thing that really stood out was a hint of sweetness, well actually is was more of a smack in that face then a hint. I figured that they didn't get a full fermentation and figured to serve it up anyways. To my surprise, they said that it's exactly the way they make it.

So, here's my attempt to recreate it:

6# White Wheat
3# Vienna
1# Carafoam
.5# Crystal 40L

1oz Tat or Hal 45 mins
1oz Tat or Hal 10 mins
.5oz Tat or Hal 1 min

WLP380 or 3333 yeast
 
If you want the sweetness, keep the recipe. If you want it more authentically German, just stick with Wheat and Pilsner malt
