I was planning on making a spiced wheatbeer this weekend, using the Belgian Wit smak pack yeast from Wyeast for the first time.
What I hadn't done was read the yeast instructions before hand - I only realised on Saturday afternoon that it might take up to 48 hours before the yeast is ready to pitch !
After a long wait all trhough Sunday when the pack only seemed to grow very, very slowly, the pack looked distinctly puffed out this morning, hopefully it will be ready to go by the time I get home tonight.
If it's not the full inch across they recommend when I get home tonight, do you think it'll be ok to pitch anyway? I'm away for the next two days so this is probably my last chance to use it.
