I'm using wyeast 3068. I am using it for a banana beer. I want it to be clear though but it says it has low floccuation. I've never used a low floccuation yeast. Is it possible to make my beer clear if I throw it in my fridge for a week after its done fermenting?

Yes - it will drop out with cold conditioning, but it may take more than a week. I have some hefes with this yeast that are now crystal clear after being in the fridge for a month.

for 3068... i've used it a handful of times, and have never really gotten a completely clear beer, even with a protein rest in the mash (hefeweizen with a lot of wheat). you "could" wait a number of weeks for it to finally floc out, or get it as close to 32F as possible to help and then rack off of it to get it clear.
