If fermentation has stopped completely at 10 days, and you've taken 3 days worth of gravity readings and know that it has really stopped, is there any benefit to waiting another week before bottling??

I have an Oatmeal Stout in the primary right now that I'm anxious to bottle. Fermentation is definitely over but I still feel like I should wait until day 21 to bottle for some reason! I know that letting it go 3 weeks won't hurt it at all, but what are the exact reasons, if any, that I should be patient and wait another week?

THANKS!!

If there is a lot of suspended "stuff" or the beer is really cloudy, then I'd wait until the beer is clear. In a stout, it's not so much clear as just without suspended stuff. That's only because the more that falls out in the fermenter, the less crud there is in your bottles.

Otherwise, you're absolutely fine to bottle after 3 days after reaching FG.
