I brewed a Irish stout about 5 days ago. I got a few friends coming over tonight and I thought I would brew a 5 gallon batch with them tonight. Problem is I only have one 7.5 gallon bucket to put the finished wert into. Do you think it's ok to transfer the Irish stout over to a carboy now so i can brew tonight or is it crucial that I wait the suggested 7-10days?
