I have a sack of pilsner malt, wyeast 1056 and kolsch yeast.
Simcoe, warrior, cascade, amarillo, and who know what other hops. Probably some stray amber malt, carmel or what laying around as well.
And most importatly an empty carboy.

I need some suggestions. My brain aint thinking to good today.
Ready... go.
 
I'd brew a Kolsch except I sure as hell would'nt use those hops...

You could however make a pilsner based IPA with those hop combination and use that 1056 Yeast
Mix in a few crystal malts and possibly some munich malts and you will have a dynamite IPA.
 
Short of the yeast, it looks like a DFH 90 min clone to me...I did a similar IIPA recently and it is looking REALLY good so far!

.5oz saaz
.5oz warrior
1oz simcoe
Tons of magnum, amarillo, cent, cascade, fuggles, chinook.
Also checked and I only have DME, a sack of pilsner and .5lb of gambrinus honey malt (big fan of that one)
Thinking of doing a pils kolsch with the honey malt and no DME.
Hop suggestions?

Make a pils Kolsch w/honey malt. Bitter with the Magnum to the appropriate IBUs, flavor with Perle, then finish with the Saaz.

Best damned idea I have heard all day!
Going to give it a try tomorrow.
 
Do a hopped up pils!!

Bitter with the simcoe. Late addition on the amarillo and dry hop with the cascade.

If you're up for the extra work then do a decoction mash or even caramelize some of the wort... or both!

Mash it low so it dries out nicely and let the bright hops shine through.
 
I'm a fan of Tett in my Kolsches but thats just me... Of course Perle is a great traditional hop for Kolsch
