Trying to branch out of the hoppy stuff and do something more creative. The inspiration is victory's moonglow. I've always had a little crush on that stuff though I wished it wasn't so sweet. Here's what I have.

8# pils
6.5# red wheat
.5# caravienne
.5# midnight wheat (color mod)

Not sure how to mash. I want it drier though. 150F or step mash?

.5oz nugget @ 60
.5oz centennial @ 20
.5oz cascade @ 20

ferment with wlp029 German Kolsch

secondary on cocoa nibs and orange zest. .33oz of zest and 4oz of nibs. Need input on these measurements as well. Going to dry hop with the remaining hops as well. I'm hoping for a balanced flavor. Subtle orange and chocolate that balances with the hop flavor.
