I picked up a kit from O'sheas for a strong Belgian. It has me seeping grains in 3 gal of water at 155 then bringing to a boil and adding the malts and Belgian candi then the hops cooling down then adding water to bring it to 5.25 gal. This can't be right...right? Shouldn't I add water after the soak to bring it up to 5 gal?
 
Can you boil all 5 gallons on your stove, and then easily cool it? If so, then yes- do the whole 5 gallons at once.

Often, extract brewing recipes are written for stove-top brewers who may have small pots or a stove that can't boil 5+ gallons of wort. Or, they can't easily chill 5+ gallons of boiling wort.

If you can, then absolutely you should do it!
