I've brewed a few beers before. All turned out fine. This time I am brewing a west coast ipa. My issue is I forgot I am going out of town coming up. My brew day was 3/8. I am leaving town on 3/18 until 3/30. Should I bottle early on 3/17 or wait until I get back? I need to add my flavoring hops a few days before bottling too.

I typically let my ales sit for 2-3 weeks. Just looking for some input. Thx!

I'd wait , but I always leave my beer in fv for 21 days . Plus you want to make sure its done before you bottle .

My SG tends to stabilize around day 10, and I bottle around day 14. There's nothing wrong with leaving it in the fermenter for 22 days, though. I'd probably wait, just to be sure it's done.

There is risk of bottling a week early but not a week late. I'd wait.
