My goal is to make a Twisted Tea clone. I decided to brew up a straight sugar water then mix in the tea afterwards. My sugar water with S-04 yeast was at 1.082 just like I wanted. This should get me to around 10.5% alchohol for that gallon. I am going to mix in 1 gallon of Arizona tea and some tea bags to try to keep it at 5.25% ABV.
