and it didn't taste how it should (I know it's not carbonated yet). Will the flavor change a lot in the 3 weeks it's in the bottle?
 
Yes it will. Aging makes a huge difference in the taste of the beer. What tastes funny the day of bottling .or even a few weeks after will taste different, and usually much better the longer it ages.
 
Yes! I never really liked the taste of my beer post fermentation. But 2 or 3 weeks and some carbonation makes a world of difference. The brew gets even better when you let it condition a little longer (say a month or so depending on the style). What kind of beer is it? Some styles of beer don't come around for 6 months or more.

Give it time and let the yeast cleanup after themselves and let the flavors meld. Your patience will be rewarded.
