On Thursday, 8/17, I made a Hefe. Missed my OG target a tad 1.045 vs 1.049, but had a touch more volume (should have boiled a tad harder or sparged less)

6lb Wheat
4lb Pilsner
.5lb Rice Hulls

HERMS System
90 min mash @152, 168 Mashout
Fly Sparge to 8.25g
6.25g to Fermenter (SS Chronical 14g)

Here is the Time/Gravity Readings.
17 AUG 1600 1.045
18 AUG 1930 1.036
20 AUG 2000 1.014

Temp has been rock solid at 62F +/- 0.5 degrees. Airlock is still bubbling pretty good. Crazy thick head when I pull samples out of the sample port.

Smells OK. Hazy as all hell (as it should be)

Yeast was WLP 300, made a 1.5 L Starter. Per package date and BeerSmith, I should have had 284.5 Billion cells.
1.036 Starter with Extra Pale DME.

Don't have a lot of Wheat experience, and I knew WLP300 is kind of a beast, as is the similar Wyeast but DAMN this cranked out fast.
 
I intentionally under pitch my hefes and I use WLP300 and 380, both are strong/fast fermenters, so my guess is the 1.5 starter really made yours go bananas (and clove), 62f ferm temp is perfect in my experience. Great balance.
 
Sounds about normal for me. I use Wyeast 3638 and my final gravity is usually reached in a matter of days. But I ferment warm at 70f
 
I normally see about 36hrs on my hefe fermentations. They rip though pretty darn fast.
