I am looking to emulate the traditional baptist church breakfast of coffee and doughnuts in a stout. I obviously know how to get the coffee flavor, but I am just stabbing at ideas on how to get a sweet bready flavor in the beer. I am using victory and biscuit malts at 12% and 6% using Maris Otter as the base malt at 60%. I have small amounts of chocolate and smoked malt for a tinge of flavor. The roasted flavors I can grab easy...its the sweet bready flavor I want to capture well. How do I do that?
