So I ordered some specialty grains for a small batch I made and I have some left over. I'm thinking of getting some DME and throwing together a Kitchen sink stout. I was wondering if there is any merit to steeping flaked corn?

tentative recipe for 2.25 gallons

3lbs amber DME
.4 lbs crystal 120
.25 lbs chocolate
.2 lbs corn

60 minute boil
.5 oz cascade at 60
.5 oz cascade at 15

as for the yeast I was thinking of trying s-04 but I also have some washed US-05 if anyone thinks that would be better.

advice regarding steeping corn or recipe tweaks would be great. Thanks

Corn needs to be mashed to convert. Better off using dextrose instead if you aren't mashing.
