Hi guys, I think some of you have done decoction mashes to increase wort fermentability (I think Kai does this, I can't remember for sure).
What is your advice on a single decoction for very fermentable wort?
I've heard some people rest at 140-145, decoct, then add decoction to get to 160 rest. Can you also explain why the dextrin rest here would actually increase fermentability? (I thought we would get more dextrins instead)
