So my wife does not like beer.

I’ve tried fresh pressed ciders etc. etc. and she never really liked them. I think the key is she likes something a little sweet and lightly carbonated. Once I started kegging I developed this recipe and she has been happy with the results. It is a favorite among our friends and I always have a tap dedicated for it. The goal of this recipe was to use ingredients from Kroger’s so I can easily get the ingredients and make it quick.

this is more in line with hard seltzer than a true hard cider.

I have 1.5 gallon kegs so this recipe is for 1.75gallons to give me a full keg.

0.5 Gallon 100% pure pressed 3 Apple Blend
0.5 Gallon 100% pure pressed Honeycrisp
0.5 Gallon Pom 100% pomegranate juice
4 cups of water
3/4 tsp pectic enzyme
1.5 tsp DAP yeast nutrient

Champagne Yeast like EC-1118

This produces about a 5 to 5.5% ABV drink.


When fermentation is complete I use a two part clarifier like Super-Kleer to fine the cider and then I rack it to a 1.5 gallon keg and add 375ml of simple syrup and 3/4 tsp Potassium Sorbate to prevent the simple syrup from being refermented.

the simple syrup I use has about 19g of sugar per 30ml serving.

The flavor of the pomegranate is more like cranberry than pomegranate but still good.
