So here's the deal. I am making an irish stout from a brewers best extract kit. Because I didn't know any better, I dumped my hot wort into my plastic fermenting bucket, then topped that off with water to 5 gallons, then put the fermenter in an ice bath in the sink to cool. This was almost a week ago, and since then things seemed fine. There was plenty of activity in the airlock which has now subsided, but I noticed something odd. My fermenter is now only full to about 4.2 gallons. Does anyone have an explanation for this? Nothing ever overflowed out the airlock, so I didn't lose it that way. It couldn't have evaporated that much volume, could it? Should I now add water to bring it back to 5 gallons, even though its pretty much done fermenting?
