Sampling Brew

I just recently bottled 46 beers into 12 oz beer bottles but had a little left over so I put it into a 2 Liter Sprite bottle. If I crack the Sprite bottle after a week to take a swig, will that hurt the carbonation?

Once it's carbonated and you open it, it's open. Any attempt to re-close after drinking some will probably result in the rest of that bottle going bad. Along with the loss of a lot of carbonation, a large amount of oxygen would be introduced to the brew. If you're gonna start drinking it, I say go ahead and finish.

How much air space are we talking about? You might not create enough CO2 to fill the space and still force it into suspension in your liquid.
