it's been 1 week since I bottled and I drank a sample just out of curiosity. I obviously knew it wasn't near done.
carbonation naturally was pretty minimal but it did form a small head and there was some rising bubbles in the beer. It was cloudy but then again I didn't use a secondary and the ale only spent 2 weeks in the primary.
the beer however tasted sour and not much different then the sample I tasted before bottling. My question is how much will the taste of the beer change when bottled for an appropriate amount of time?
