Hello

Im brewing for some time now.
I will brew a dopplebok next week and I have two packs of yeast the first is fermentas w34 lager yeast which I used before and has a clean and nicce teast.
the seconed is S-23 also from fermentas which Ive never used and I dont know what will be his effect on my beer.
I anyone here has any idea or suggestion it will be great..
 
W34 is very clean tasting.

S-23 can produce some fruity esters. Typical dopplebocks are very malty tasting, a slight ester taste may be nice.

For either yeast recommended fermentation temperature: 9C – 15C, ideally 12C. This is critical when using lager yeast.

Since lagers are fermented at a low tempurature a lot of yeast is needed, if you are making a 5 gallon batch I would use 2 packs of yeast. Check this website for an exact amount. http://www.mrmalty.com/calc/calc.html
