A buddy of mine called me to say his new batch of beer, only 3 gal is stopped at 1.023 after 4 days in the carboy. He used S-04
I first told him he should not test FG for at least 7-10 days after pitching the S-04.
His grain bill was weird, he used only 2 kg of Munich in his mash and I don't know what his mash temp was. Not really sure why he didn't use any 2Row or what type of beer he was trying for.
I know that S-04 flocculates VERY well and forms a super tight cake on the bottom of the carboy. Given this would it be a good idea for him to stir up the yeast cake again?
Also, I heard you can pitch Lager yeast into a stuck fermentation, but would this change the character of the beer by mixing Ale and then tossing Lager yeast on top?
