So I recently tried a special release beer at a local brewery called NoDa Brewing Co. The beer that they had on tap was awesome. It was pegged as a Red Pale Ale (8% abc, 17 SRM, 72 IBUs). Their description said it was hopped with Nelson Sauvin, which provided a nice sweet fruit tone to it. At any rate, it inspired me to come up with my own hoppy red beer...an Imperial Red Ale if you will. Here's what I came up with. Any advice or tips would be cool.

Yeast: White Labs Cal Ale or Cal V
Yeast Starter: 1.2L
Batch Size (Gallons): 5
Original Gravity: 1.082
Final Gravity: 1.018
IBU: 72
Boiling Time (Minutes): 60
Color: 17.5
Primary Fermentation (# of Days & Temp): 10
Secondary Fermentation (# of Days & Temp): 7-14 to clear
Imperial Red Falcon
17 lbs - 2-row
2.75 lbs - Crystal 60
1.25 lbs - Vienna
.25 - Crystal 120
(Mash 60 mins at 155F)
1.75 oz - Galaxy (14%) @ 60 min
1.50 oz - Falconers Flight 7 Cs (9.9%) @ 10 min
1.50 oz - Falconers Flight 7 Cs (9.9%) @ 0 min
1.00 oz - Falconers Flight 7 Cs (9.9%) Dry Hop 7 days
Pitch either WLP Cal Ale or Cal V...undecided
I might skip the dry hop. I want it to be hoppy but not 100% hop dominant. I'd like the malt to to come through as well.
