Decided to brew this up during the memorial day weekend. I know wits have no late hop additions but I had some citra on hand and decided to throw the rules out of the window.

Batch size 6 gallon
Bottling batch size: 5.5 gallon
Boil length: 60 minutes

6 #'s 2 row
3.5 #'s Avangard wheat
1.5 #'s flaked oats
0.5 #'s carapils/dexterine
1 Campden tablet
1 TBPS PH Stabilizer

19 quarts water at 150° for 60 minute mash
20 quarts water at 168° for batch sparge

1 oz Saaz (2.4 AA) 60 minutes 10.3 IBU
6 tsp yeast nutrient 15 minutes
0.5 oz lemon peel 5 minutes
0.5 oz bitter orange 5 minutes
0.5 oz sweet orange 5 minutes
0.5 oz coriander 5 minutes
1 oz Citra (12.3 AA) 0 minutes 0 IBU

Chilled to 72°
Added Mangrove Jack's M21 witbier yeast.

Came in at 1.046 or 12 Brix.
 
Finished at 1.009 or 6 brix. This beer smells amazing, will post more pics when bottling next week.

Bottling sample was very well balanced. A good maltiness balanced with banana citrus and clove. Next time I may up the citra or citrus peel but this will be a summer crusher
