I had a cider that had just cleared up, with quite a bit of sludge on the bottom. So I re-racket it into another carboy for some aging, being careful not to siphon any of the sediment on the bottom. Next day the cider was still "read a newspaper though it" clear, but now a few days later it is cloudy again. I did add a little bit of new juice when i re-racked to bring it up to the top of the carboy, but no more than 12oz.
I just took a sample and it still tastes good/the same, but I am wondering why this has happened and obviously I'm worried about infection.
Also, cider was at 1.000 when re-racked
