Hello!
I just got 3 nice looking Winter Luxury variety pumpkins from a neighbors garden. I looked them up & they're great for cooking/baking.
I don't want them to go to waste, but I'm unsure when I'll get to brew, and so forth.
I'm leaning toward getting them cut/cleaned/roasted in the oven, and then scooping the pumpkin into FoodSaver bags and vacuuming sealing to be used within the month. I've never roasted whole pumpkin before, but thought it would be a good experience to try.
Would there be any negatives to this?

I scoop out the seeds and roast them and cut into wedges,scrape off the hairy stuff and press some brown sugar and roast until dry almost. when cool remove from skin and cube it. They go into a mesh bag and then plastic zip top and freezer.
Thaw overnite and add to the BK like FWH's
