I am brewing 8 gallons of starter wort. My plan is to mash and boil for 15 to 20 minutes to gain hot break. After that I will be putting into half-gallon Mason jars. I won't have time to put these in my canner until this evening. My question is should I chill before putting into the mason jars?
 
You will not want it hot going into the jars . Could cause breakage. Also unless you are using a pressure canner they will be affected by botulism.
 
Yes, I have an actual pressure canner. Good point on breakage. I guess my real question is, do I need to chill quick or can I leave it in the kettle for a couple hours. It is only starter wort.
 
Leaving in the kettle for a few hours should be ok. Doesn't seem to be a problem for no chill brewers up to a day as far as I've heard.
