So I am trying to create a recipe for an RIS loosely based off of Surly Darkness and Bourbon County Stout.

Here are a few questions about my recipe below:
- I am not a fan of hoppy beers, are my IBUs too high? Should I cut out the Amarillo at 10 min?
- I love malty and sweet beers.. should I do something like add 0.5-1.0 lbs of Special B?
- Am I using too much roasted malt? Maybe cut the Roasted Barley down to 0.50 and Black Malt down to 0.25?
- Will I get any molasses flavor from the 0.50 lbs of Brown Sugar?

Batch Size= 5.5
OG= 1.115
ABV= 11.4%
IBU= 62.0
Bitterness Ratio= 0.5391

Light DME= 12.00 lbs
Aromatic= 1.25 lbs
Crystal 60L= 0.75 lbs
Black Patent= 0.50 lbs
Chocolate= 0.50 lbs
Roasted Barley= 0.75 lbs
Brown Sugar= 0.50 lbs

Columbus= 2.00 oz (60 min)
Amarillo= 1.00 oz (10 min)

I would increase IBU's to 75 and drop the Amarillo just for some semblance of balance. I would up the roasted barley to 1 lb as well as the choc malt to 1 lb but that's just me. Won't get much flavour from .5 lb brown sugar in this beer. Recipe looks good to me but I'm an all grain brewer so I can't comment on the DME.

Thanks for the feedback.

I've tweaked the recipe and cut out the 10 min hop addition.

Batch Size= 5.5
OG= 1.126
ABV= 12.5%
IBU= 63.9
Bitterness Ratio= 0.5071

Yeast= S04

Hops= Columbus 2.50oz @ 60 min

Light DME 12.00
Munich 3.00
Crystal 60L 1.00
Special B 0.75
Roasted Barley 0.75
Chocolate 0.50
Black Patent 0.25
Brown Sugar 0.50
