I see numerous types of fruity beers here, but can't find any that use persimmons (either wild or domestic varieties). Since persimmons are fairly mild flavored, I'm guessing that I should keep the IBUs low (< 20) and start with a mild tasting ale recipe? Also, maybe a little cinnamon and/or nutmeg spice? Any advice out there? AKW
