my brews as of late have been way over carbonated. Why is this?

I bottle. Sorry-should've put that. I may have mixed too much priming sugar into the batch but I have like 3 different batches that all seem to overflow as soon as I open the bottle. But two of those batches I follow the directions. Maybe they've been sitting for too long?
 
Are you measuring the priming sugar by weight or by volume? That's a pretty common mistake. 6oz as measured by a measuring cup is not the same as measured by a scale, etc.

Alternatively, you may be bottling too early. If fermentation has not finished when you go to bottle, you may end up with gushers or bottle bombs.
 
Ideally you should provide us your process, etc.

This issue can be from too much priming sugar, beer not finished fermenting or infection as well as improperly mixing the priming sugar
