….sigh…I’ve brewed this milk stout a few times but inexplicably I grabbed my bag of corn sugar instead of my lactose…2lbs into this 15G batch..

Instead of 6.5% beer Im going to great about 7.5% and I’ll not have that silky sweetness from the lactose.
The yeast (WLP004-Irish Ale fermented at 64F) sure were happy to see the corn sugar! My ferm chamber may never be the same
It’s been fermenting about a week. I’ll let it go another week and sample but Im very curious what Im going to find.
I usually rack this beer onto coca nibs…im wondering if i could rack onto cocoa nibs and boiled/cooled lactose?
For all I know it will be the best beer ever as-is ….. I guess we will see….
