Well i finally opened my fermenter after 2 long weeks of torture, the color looked good, and it smelled like beer, so yay. I took a little taste and it tasted like a hef, nothing spectacular but good enough for a come back brew. My FG was fairly close +/- .3%, it did have a slight sour off note so i will let that slide until it's no longer green.
Man I wish I could fast forward that apfelwein!
