Im getting ready to do my first all grain batch here in a couple weeks, a simple 2 row & chinook SMASH, and I wantedto up my thermometer game.
So I picked this guy up on sort of a whim.

Anyone have experience using something like this for their mash?
 
Be careful with that style of thermometer. They're not really designed for liquids. It will work, but try to keep the lead from getting wet. I had one of those when I started, but switched to a waterproof model because I kept having to replace the probes.
 
Yes, definitely do not submerge either probe above the crimped end, the braid will allow liquid to seep down to the sensor and that'll be it for the probe.

You could use food grade heat-shrink tube and cover all but an inch or so of the probe ends all the way to the connectors and likely have a survivable, dunkable solution...
