Looking for a light, crisp, and barely bitter pale with a Nelson bomb.

9.5 lb 2 row
1 lb Crystal 10L
.5 lb Cara-pils
60 minute boil
10 min - 1 oz Nelson
5 min - 2.5 Nelson
Whirlpool for 30 minutes below 180 deg f - 3 oz Nelson
Dry hop 1 - 3 days - 5 oz Nelson
Dry hop 2 - 3 days - 5 oz Nelson



Belgian Saison
8 lbs - Pilsner 2 row
2 lbs - wheat
1 lbs munich
.5 lbs - brown sugar
.5 oz at 15 min - warrior
.75 oz at 5 min - amarillo
.75 oz at 5 min - citra
.5 oz at 5 min - cracked pepper (or maybe .25 oz???)
Whirlpool for 30 minutes below 180 def F - .25 oz amarillo and citra

Ferment at 70 for 5 days and then ramp up mid to upper 80s until around 1.010 ish
 
It's really helpful if you run it through some free brewing software to figure the OG/FG and IBUs to see if it balances. I'd not really be able to guess as to how bitter it will be without knowing the AAUs of the hops, and the likely IBUs you'll have. It may be fine, it may be too bitter, or it could be too sweet I'm afraid.

I will say that I despise the taste of fermented brown sugar, especially in a light beer (icky molasses flavor without the molasses sweetness), so I might reconsider that addition.
